Handful of pistachio kernels Baby spinach Half a red capsicum 100 grams of mature blue cheese (or feta or parmesan) Dried chilli Half a red onionHow to do: Chop up the pistachio kernels Fry the chilli in olive oil (probably only for 30 seconds) then add the capsicum and red onion Capsicums don't need to cook for long, just until they are soft (you can add garlic if you want at this stage). Keep the oil because to use for the dressing. Let it cool down. Use a handful of spinach for each person in a bowl, and put in the sautéed capsicum and onion. Then toss so the heat of the capsicum and onion starts to wilt the spinach slightly. Then crumble in the cheese and pistachio nuts. Put in the chilli. Put salad on plates. To make the dressing use some balsamic vinegar and add oil left over from the cooking. Whisk and drizzle around the salad (don't worry about using too much because this is great to mop up with some bread.)
