I know that a lot of you gardeners are going to be worrying about courgette overload before long, so here's another recipe for using them.
Stuffed courgettes
Ingredients
- 2 large courgettes - 250 g cooked lamb pieces - 50 g cooked rice - 1/2 bunch chopped cilantro - 1 chopped onion - 2 eggs - salt & pepper - 1 can (200 g) peeled tomatoes - harissa (chili paste) - 3 cl olive oil - 5 cl water
Boil the courgettes for approximately 10 minutes until they soften.
Cut the courgettes in two lengthwise and scoop out the seeds and some of the pulp.
Chop the meat and mix it with the rice, cilantro, onions and eggs.
Stuff the courgettes with this mixture and place the items in an oven dish.
Make a sauce with the tomatoes, the harissa, the olive oil and the water. Put the sauce in the oven dish with the courgettes.
Bake in a hot oven for 35 minutes.

I imagine this with crabmeat or crawfish in lieu of lamb.

How about muskrat? You can use whatever animal you want and it will be just fine.
