(Lardons are thick little rectangles of bacon.) For six persons: 1 head of curly chicory/endive, washed and cut up 200 g of smoked lardons 2 tomatoes 4 partially boiled eggs with 'loose' yolks vinaigrette Grill the lardons in a hot pan. Cook the eggs for 2 1/2 minutes. Cut the tomatoes into small cubes. Make a vinaigrette with a lot of mustard. Mix the salad, pour on the vinaigrette, add the cubed tomatoes and the runny eggs. Pour the frying grease out of the pan and put the lardons on top of the salad. Serve in invividual bowls.

Yes, I agree completely. I've put in simple cubes of roast pork before. I'm sure using cooked ham in salads is good too.

I've also had a very good salad with "lardons" that are actually cubes of smoked salmon. Very different but also very very yum.

Love curly endive. My father always grew it and ate it almost everyday. Shame back then as a child I didn't like it.

Absolutely -- I must remember to go to one of the fancier greengrocers this summer because I love dandelion salad and none of the places that I normally go to have any dandelions.

sorry about the spelling. dandelion is really an early spring delicacy, K. in summer, it will be all too grown and not as tender.

There's a strong resemblance to "Wilted Lettuce Salad"
It sounds very good, but I'd not suggest serving it before a course of Pasta alla Carbonara.
