Polish Easter Horseradish Soup
2-3 roots horseradish 0.5 lbs. bacon or ham 1 1/2 l milk 2 Tlbs. flour 2 eggs Polish Sausage,(Kielbasa) 2 hard boiled eggs
Grate horseradish on a fine grater(Warning:eyes will tear up as in onions) In the same time cook ham or bacon in 2l water for 1 hour. Remove meat from pot but pour in grated horseradish to the pot. Boil horseradish 1 minute and then add mixed eggs,milk and flour mixture.Boil 2 minutes and then strain the soup from the horseradish pieces. Add sliced kielbasa and garnish with hard boiled eggs and fresh parsley.

I was waiting for someone to ask this -- guess it will be me: the horseradish doesn't make the soup spicy hot? I love the flavor of horseradish, so would probably like this, but am having a little trouble envisioning it.
Do the 2 liters of water reduce considerably while simmering for an hour? Is the ham or bacon then discarded? Once the soup is strained, does it have a cream-like texture?

It's not real,real hot.(You of all people,I have a hard time explaining what's too hot and what's not).The texture is not too creamy,you can adjust that accordingly,it's more of a cream broth. And yes,you do discard the bacon or ham.

It's meant to flavor primarily.The bacon we used was the thick slabbed fatty kind so after cooking especially to a boil it's not real flavorful anymore. The kielbasa sausage provides a good additional meat flavor and texture.

Basically, Baz had a houseguest from Poland last year (two actually), who found fault with everything he put on the table, in extremely non diplomatic terms. I don't think he even could have served her a glass of water that would have met with her approval.
