Unfortunately, there is probably not much need for so many oxtail recipes when so few people have an interest in eating oxtail. Even in the countries concerned, most people would prefer to eat more noble parts of the animal if they have access to it.

Your cooked oxtails look really meaty and delicious, Kerouac. Re: preference for more noble parts of the animal -- boy, would you love Mexico! All kinds of the bits and pieces are consumed avidly. There are stands dedicated to beef head tacos for instance, and espinazo de puerco -- pork spine -- features in many classic recipes. I could give more examples, but you get the idea. As soon as I saw the picture of the cooked oxtails, I thought "salpicón!". It's cold beef salad that in my opinion is too boring when made with lean meat -- it has an underlying dryness that can't be ignored.
