Potatoes are good for you and oil is good for you, so why are french fries/chips bad for you?
Most of the problem comes from the heat. Overheated oil creates cancer causing substances and even overheated potatoes are suspected of breaking down into unhealthy molecules.
Basically, small thin french fries are the worst of all, because they absorb the most oil and heat up the most. Thick fries take in much less oil, and the potato is less 'damaged' by the heat.
This doesn't mean that you should never eat McDonald's fries, only that you should do so in moderation.
I am lucky to have always preferred thick limp fries to the crispy thin ones -- but I don't eat them often anyway.

A friend of mine turned me on to a little bistro here that does their fries in goose fat and no other fry will taste quite the same after that.

In Belgium, which arguably has the best french fries in the world, a certain percentage of beef fat is used in making them.
I do notice, however, that whenever the health dangers of french fries are mentioned, people immediately try to change the subject.

I would say I have deep-fried foods a maximum of three times a year, if that, so I'm not going to get too worried.

I probably shouldn't tell you pommes frites / Belgian fries / chips / French fries freaks this, but ....... was just reading a foodie blog that suggested having Bearnaise sauce with fries. That could work.

I only eat them now if they have truffle salt on them.
It's the only way to go although cooked in goosefat as well as the truffle salt might be even better. I should try that.

Every recipe that uses duck fat tends to say that any duck fat left over should be saved for cooking potatoes.

Oh man, rast poatoes in duck fat are the best. I got a huge bowl of the stuff in the fridge from some recent duck confit.
