So that is how raclette is made! I always thought it was done on a griddle and wondered which cheeses were used that didn't stick.
What is he doing after he scrapes and serves? Is he neatening up the edges so they don't melt down into the heat source?

well, you can either push the edge towards the heat and so it'll scrape in the next plate or let it get nicely crispy and cut it off... and eat it! it is called a "religieuse" i.e. "nun". don't ask me why...
