If you were going to open a restaurant, what would it be like? What type of cuisine, ambience, etc. would it have?

I have to admit that it has been a fantasy at times, and when I was a partner in a café, we had a few special dinner operations where I worked in the kitchen and it was a great success. I would do fusion food at the time, because it was the fad -- Tex-mex mixed with Vietnamese and Nordic, for example. They were big tasting plates with a variety of things to discover. Therefore there is a restaurant in Paris that appeals to me very much. There is nothing fancy about the cuisine, but it completely corresponds to my concept of meals as an adventure. Zango is the place, and if you click on 'nos menus' you have a large selection of ethnic dishes from which to choose to create your plate of food.

Something simple like a pizza parlor with all types of different draft beer. Ambiance wise I'd like it to look like a wine cellar.

I would love an outdoor, beach or country, big bbq type restaurant. So a big fire in the middle, people sit at big informal tables. I would have different food on different nights, seafood, meat, veggie etc.
Lots of candles and windchimes.
It would be a bring your own bottle, that way I would not have to worry about trying to get a liquor licence for an outdoor establishment (quite tricky).

I would like to have a restaurant in Greece. There are good tavernas on the waterfront on many islands. My restaurant would be in a courtyard so it was private. There would be climbers ad sweet smelling flowers and a palm tree or two. Food in Greece is nothing wonderful - it's that waterfront setting that makes us think it is. Yet Greece has the same raw ingredients as all the other Mediterranean countries. I would have a daily changing menu that drew its inspiration from Italy, Turkey and France. And I'd let Egypt be represented by baba ganough.
