I am increasingly addicted to using coconut milk in cooking. I can't keep enough cans in stock in my pantry.

Sautéed but not fried.
On the subject of coconut milk, I was horrified today to see that Dia sells the big cans for 1.29€. In my Chinese supermarket, the various brands cost from 0.85€ to 1.03€.

What is the difference between Dia and the older "Ed" chain? Are Dia outlets larger? Often "Ed" shops were in places one could not lodge a larger supermarket. I'm not surprised, I always find better prices for that sort of item in the relevant "ethnic" supermarket.
bpollet, that sounds delicious.

That does look irresistible, bpollet.
I don't see much monkfish around here. I wonder what else would work. Is that a firm fleshed, mild tasting type?
Also, is 50 cl 500 ml and therefore a half liter? Or what we'd call ~ 2 cups? If so, then 3 cl is around an ounce.

Ed is slowly disappearing as the stores get made over with the Dia name. Carrefour first bought the Dia chain in Spain, from which it had already spread internationally, but Ed was already too well known in France to abandon the name immediately -- but finally the decision has been made.

Yes, any firm fleshed, mild tasting fish is ok, maybe you could try this recipe with Perch. 50cl is half a liter, and yes 3cl is around an ounce! enjoy

Thank you, bp. I'll definitely try it. My favorite old fish store has closed, but maybe I can find monkfish somewhere.
Our antiquated system of measures has got to go. I calculate in ml all the time at work, but never use cl.

I am increasingly addicted to using coconut milk in cooking. I can't keep enough cans in stock in my pantry. I can barely abide the stuff. Murks up clear sauces with its vaguely "soapy" taste. I could go on about the "cocos fríos" sold here for drinking, but I won't. Coconut has a proper place, mostly in coconut cream pie.

I'd add some curries to that.

That's an option, but keep in mind that the original recipe use lime juice so if you'd like to add curry, I advise not to add lime juice.

Oh, I should have made myself clearer. I was replying to this: ... Coconut has a proper place, mostly in coconut cream pie. By the way, vindaloo and fish curries are generally slightly sour, either from vinegar (vindaloo) or from tamarind. But I'm not sure vindaloo is made using coconut milk.

I have a fantastic recipe for vindaloo which I've used many times and it's always delicious - but definitely no coconut milk....
