It was difficult for me to say at first, but once you've done it a few times, it's not difficult at all. After all, people say "Sister" and "Father" in English also.
I know that administratively, a nun is "Madame."

Plain old "Soeur" didn't seem right, either. A nun in charge of a foyer could be "Madame" also, then?
