Following Bixa's suggestion, I picked up a small packet of Amaranth. Now I don't know what to do with it exactly, except cook it and eat it, of course.
Following the logic of modern globalisation, this foodstuff, originally meso-American and which is certainly growable closer to here, is imported from France.

At least when I buy "rice for sushi" it only comes from Italy.
