Having had our fill of banana bread I was searching for a way to use up the ( at least in our house) regularly occurring mushy banana So tried " Toad Cake" for a change . Loved it, a real treat and so easy to make , I did not have any rice flour but it was fine without it . chaosnet3.co.uk/hosted_samkitchen/?p=67Any other recipes / ideas will be gratefully received ...

Ha, that's funny because I am about to make some banana bread.
However, your mention of "something else" makes me remember the delights of "banana pudding". Of course, for that one would need the vanilla wafers of my youth and some vanilla pudding mix...

I store overripe bananas in the freezer and make large batches of cranberry banana nut bread once I have enough to make it worthwhile.

They're good cut up into hot oatmeal.
I peel them & store them individually in the freezer for use in smoothies.
The toad cakes sound wonderful, plus that's great advice on frying.

I am definitely doing something with my bananas soon, as they reach maturity and I stupidly watch them. Since I have some puff pastry, some liquid honey and some cinnamon, I am getting an improvisational idea.

My banana bread was spectacular. I took half of it to my old office today to cheer up my remaining former colleagues who are on the verge of suicide. They might last a few more days thanks to my baking skills. And I was invited to lunch, which is something that us old pensioners never pass up, although it might have also been in anticipation of the film premiere to which I am taking one of my colleagues on Monday so that she can meet Juliette Binoche in person.

I posted this recipe for curried banana soup on the soup recipe thread, but I still have not tried it myself:
25g butter 1 small onion, chopped 1 tsp curry powder 900ml chicken stock 350g ripe bananas 2 tbs lemon juice salt 125ml cream
Melt the butter in saucepan and cook onion gently for 5 minutes. Stir in curry powder and cook for 30 seconds. Add bananas, lemon juice, salt and enough stock to cover. Bring to the boil, put the lid on and simmer for 15 minutes. Transfer to processor and make puree. Return to saucepan. Add rest of stock and cream. Mix well and taste for seasoning. Reheat and serve.

How did it go? I think Binoche is one of the most elegant actresses to grace the Big Screen. Her expressions say it all. The film was excellent, but it is actually 3 years old although it has been released in very few countries over the years. It is a Norwegian film (but almost entirely in English) called "A Thousand Times Goodnight" but the fact that she is still defending the film after so many years means that she really believes in it.

There is something hypnotic about ripe bananas. No matter how many preventative measure we take the monkeys find a way into the house and skidaddle with them! Always a window or door left open while the ironing gets packed away, or lunch is being prepared. Those rascals time it to perfection!
If my bannanas were allowed to get over ripe I would make bannana fritters. Mashed with flour, egg and milk then dropped into a tub of hot bubbling oil - after becoming a lovely brown , scooped out and drained on paper towel then dusted with icing sugar.
The same goes for pumpkin. Heavenly.

I had to throw away two bananas this week even though I kept telling myself every day to do something with them, even just fry them in butter and sugar if necessary.

No, that would not have been too good. Bananas need to be fried/cooked before too ripe. The cooking/frying process turns them pulpy in any case. mashing them with flour etc. and deep frying or in a banana bread is the only way for very ripe bananas.

During the holidaze, my thoughts occasionally turn to Elvis Presley (Blue Christmas, etc) - who had a thing for peanut butter, bacon and banana sandwiches. I think using overripe bananas (rather than slices) would add much more flavor to this whole contraption - you could mash them first, chop up the bacon, then mix in with the peanut butter, to make a more homogeneous filling.
I used to make a lot of banana bread, muffins, fritters and pancakes when I had my B&B - it's easiest if you measure the old bananas for the specific recipe before freezing.

This is one of those you-have-to-try-it-to-believe-it things ~ banana and grapefruit blenderized together. That's all you need! The grapefruit does have to be pith free, so you either have to patient enough to do it yourself or buy those jars of grapefruit sections in the refrigerated case.

bixa, this is much appreciated. I'm always looking for the simplest way to transform something healthy like fruit.
I'm aiming to try 100 new recipes this year and this would be such an easy one. You may not think something this simple counts as a recipe, but I do. It combines and transforms two different foods.
Price-Waterhouse is not asked to double-check my figures.

I turned a super picky dieting friend of mine onto this & she continues to be as amazed as I am that it is so simple and tastes so good. Look at the nutritional benefits from combining the two: banana and grapefruit.

these days, i freeze overripe bananas (or leftover half-bananas that are already peeled because someone in the household is convinced she needs to peel a whole banana and then only had a couple of bites) and later puree them with an immersion blender and add lots of cocoa powder and thus get banana-chocolate ice cream. very easy and i suppose a lot healthier than normal ice cream, as i add no extra sugar ...

I was watching our over ripe bananas and thinking they would be delicious cooked with some sugar and flambeed. Then I left for Krakow and they disappeared - I guess they are on the compost now.
