I don't need "toppings" on my salmon but I can imagine that it could make it more palatable for people who are not big fans of fish. The photo doesn't look bad, just unnecessary.

You could do that with basa or tilapia instead. I have had good (wild caught) Atlantic salmon, but it was with some Micmac colleagues. Arctic char is also excellent.

Lagatta, I have found Basa so soft and delicate that the only way I like to enjoy it is with a light coating and deep fried. This is how a local restaurant serves its basa - on top of stirfried veg, and sticky rice on the side. Very delicious.!

I've never had basa that way and I have to admit I probably won't try it. It's the one fish I can truthfully say I loathe -- nasty, nasty texture.

I agree Bixa - the texture is too soft and floppy but as you can see there is a fair amount of coating. This makes it very edible. You can see two little dishes of sauces….they are Thai dipping sauces and the batter is also super crispy. The restaurant ran out of Basa once and replaced it with hake. It just was not as good.
