Scotch whisky is the one that is made only in Scotland, from water and malted barley only. Close. The vast majority of Scotch whisky is "blended" whisky - which means it is malt whisky blended with whisky made from grains other than malt. Pure malt, is whisky which is blended from the malt whisky of several distilleries. Single malt is the malt whisky from a single distillery. The whiskies you have on hand are all Single Malts - i.e. the whisky in each bottle is solely the product of the named malt distillery (Glenmorangie, Macallan and Highland Park) - diluted with spring water to reduce the alcohol content and bring it to a drinkable state. All three of those whishies btw are "Highland" malts. Other regions known for producing malts include the Lowlands (e.g. Glenkinchie), Islay (pronounced eye-luh - e.g. Laphroig) and Campbelltown (e.g. Springbank).

Imec, isn't there scotch that is more peaty(is that a word?) than others? I have tasted those and I am not a fan.

Yep, that's the Islay malts (Laphroig, Lagavulin and others) - kind of like licking an ashtray to some. Others love that peaty, smokey, iodiney quality.
I prefer the Lowland malts as an aperitif (lighter and softer) - my usual being Auchentoshan 10 yrs. and the Highland Malts after dinner - the Macallan being a great example of a rich after dinner style. Some of the Highland malts are on the lighter side though and make great aperitifs - Glenlivet for instance is on the lighter side. Talisker is an interesting malt - fiery but not as peaty as an Islay malt - It's from the Isle of Skye - more of a "winter malt" to my taste.
I also recommend trying whiskies that are aged in different types of barrels (e.g. port, madeira) - Glenmorangie makes a range of these.
There are lots of good books about Whisky (and Whiskey). One of my favorites is "The Malt Whisky Companion" by Michael Jackson (no, not that one).
