Still without electricity keeps me juggling pots and pans on my one little gas ring. Never mind- where theres a will there is a way! It's definitely going to be the Duck Confit with fresh vegetables.

Em and I are eating together later and I am making one of our favourites - Hainanese chicken and I might make Penang Acar to go with it as I think I have all the ingredients or most of them anyway. Otherwise we will just have it with the usual rice,d cucumber and a spicy sauce.

I know just how it tastes, and I,m sure Kerouac too. I had it in Singapore of course, but a Singaporean woman used to live not far from me and gave lessons in Asian cooking. One of the dishes taught was Hainanese chicken Rice. Too many it is a fairly bland dish if it were not for the sauces, but thats the whole object of having succulent boiled chicken to dip into spice and have the rice and cucumber on the side. After she boiled the chicken for not more than 35minutes she jointed it and then re-assembled it on a platter with the cucumber.
Today I rotated the pots and we sat down to a lovely duck lunch/dinner.

Had lots of cold roast beef left from yesterday's dinner...I usually use it for pies, stir fries or with pasta. However it was so beautiful I just made baguettes and we had the beef sliced in them with some fried onion for lunch. Jeff had brown sauce on his, I just had salt and pepper...they were so lusciously delicious I made more hot baguettes and we had the same for dinner

I have never heard of voiled leeks so will look them up - they do look good. Had lots of cold roast beef left from yesterday's dinner...I usually use it for pies, stir fries or with pasta. However it was so beautiful I just made baguettes and we had the beef sliced in them with some fried onion for lunch. Jeff had brown sauce on his, I just had salt and pepper...they were so lusciously delicious I made more hot baguettes and we had the same for dinner yummy Tonight I am having salmon cooked in a crème fraiche and mustard sauce with spinach and sauté potatoes . Diet starts tomorrow !

I think it’s a typo for boiled... Could be "soiled". Don't rule that out, nor coiled (although they look nice and straight). Also could be foiled, as he tricked them into being cooked. Or foiled as in covered with vark. There is moiled, because getting all the sand out is hard work. Maybe he really meant voiled leeks, as they are nicely covered with a delicate, veil-like sauce. Lotta possibilities. They do look good enough to eat, though.

Here we go again making dinner on one gas burner and a little bit of help from the microwave - but when I switch it on it strains the generator something chronic!
So tonigh'ts plan is bangers with red onion in one pan. Mashed potatoes and carrots together in another pot. And the last of three courgettes and a few sticks of broccoli in a microwave dish. Gravy in the pan with the bangers. 6 days now without electricity! Unfortunately we forgot about two fridges next door at my sons "to be" house. 10 loaves of bread and two packs of frozen veg - all gone to heaven for bird food.

Tonight will be steak tartare with some salad. I took the chopped beef out of the refrigerator earlier this afternoon because I don't want my meal to taste icy even if nothing is cooked.

although I had an oven working again I decided against the Fishermans Pie - store bought - and grilled the remaining four posrk sausages (they always come in packs of 8)and served up some gem squash and freshly picked green beans.I made an onion and tomato gravy/sauce to spoon over the samp and bean mixture (defrosted).

I'm baking a slab of pork belly with Chinese red glazing sauce. I threw in a plantain banana and some small turnips for the hell of it.

I went out for lunch at one. We took a long time choosing from the menu, then ate in a leisurely way. Sat at the table & talked for a while, then ordered dessert and coffee, which was also consumed in a leisurely way. Finally the bill was paid & we got up go but it started raining. That meant another good while sitting on a bench in the restaurant's foyer. The rain then slacked off enough to walk home, where I arrived at 5:15. It's now an hour later, so technically time to be thinking about supper, but the lengthy lunchtime makes me think I just finished eating, so I can't work up interest in supper. I kind of hate when this happens because I know I'll wind up being hungry when it's really too late to be eating.

Last night I tried another trick in my Airfryer by parboiling some cut in half potatoes in a stock cube, then letting them dry out a bit before enveloping them in a cup of soft duck fat I saved from the confit dinner. Then I put them in the airfryer without the bottom basket thing and let it sizzle away before draining them and puting them back with the basket thing. (My airfryer has a sort of solid metal pate with holes in it) They came out golden and lovely so then it was time to do the rack of lamb. We had it with cabbage and hubbard squash from the garden.

Due to a power out at 3am which lasted until lunchtime I decide BBQ was the way to go tonight. I made two enormous lamb kebabs ( or might be known as Souvlaki) also had some Farmers sausage to grill. Because I have an old un-erasable memory of us having souvlakia at a Greek restaurant at least once a week when we were just married, I often try to replicate the way it was served. A beautiful long wooden stick of succulent lamb pieces nestled on top of a mound of rice with a most delicious white sauce studded with mushrooms. I nearly get it right but I think we were so hungry then that the flavours will never fade and everything beyond those days is not quite the same.

What's the deal with the power outage there Tod? Infrastructure? That does suck.
In anticipation of the cold snap here T made a vat of beef vegetable soup. He made enough to distribute to 5 neighbors with plenty left for us. Perfect fare for this dank dreary weather we are having.

Cheery Im a big wholewheat/brown bread fan and I bet yours was still warm out of the oven!
Casimira - Our sub-stations should have been replaced 20 years ago. Just about the time South Africa gave everyone the vote and became a democracy. Somewhere along the line knowledgeable electricians and specialists where replaced by the new government and so most took off to Australia, New Zealand etc. This left a vacuum of highly qualified people and as those now in charge had no idea of what should be updated just let things run until it all collapsed slowly but surely and the public has been left with hit and miss power. It is also more complicated than that and goes to billions and billions going into the pocket of corrupt government officials. BUT, today is a joyous one for us as the workmen are here - right up on my roof,- installing the solar panels which will enable us to hold two fingers up in a V shape or maybe even one middle finger up, to the power grid!
Tonights dinner will be a beef and mushroom pie with vegetables. Besides the filling, Í have made the pastry myself only because I found a box of Atora in my fridge. I used half the packet along with butter and finely grated Pecorino Romano cheese, and fresh thyme. This pastry ïdea" and recipe, comes out of a magazine for a goats cheese and roasted garlic quiche. I'm going to do that soon as I've bought the creme fraiche and other ingredients.

Yes!!! Bravo on the solar power!! (NOLA's electrical power grid has always been fragile at best so, I can relate to the frustration you must feel. I'm glad we have a gas stove/oven) Your quiche sounds divine!
