This morning I made puff pastry. I made some in school when I was about 14...but have always relied on shop bought as it is invariably pretty good quality. Anyway i wanted to make some just to see if I could. It's resting in the fridge...along with ome sweet pastry that I made. Later I plan to make sausage rolls and an apple pie. Sweet pastry is for the bottom of the pie and I'll use puff on top. I'm quite excited to see if I achieve the layers in the pastry...it was fiddly and time consuming to make.

I had a friend from England who would make it once a year. She would roll it out on top of her washing machine in her dinky kitchen. She said it always made her feel that she was accumulating extra points in heaven.
Yesterday for breakfast I made an ad hoc savory zucchini cake in my toaster oven.

My father's wife, who was trained in France, made pastries and desserts for a good local restaurant at home when I was a teenager and I did my best to help when allowed. I fondly remember making layer pastry for desserts and croissants where we'd roll out, butter, fold, reroll and repeat forever. After you've done it something like a a dozen times, the pastry dough is like literally a thousand layers!

A few weeks ago I found a lovely Christmas cake recipe by Skye McAlpine in the newspaper. I made 2 smallish cakes (5 & 6" deep cake tins) one to eat and one to save for Christmas.
They've both been eaten. Well they were delicious...both on their own, with a chunk of cheese or warmed up and smothered with custard.
So I have the fruit soaking in 300ml courvoisier brandy to make a large one...this time him indoors wants marzipan an icing too....flipping cheek.

All of the talk of marzipan and icing elsewhere made me find an only slightly expired box of Betty Crocker brownie mix (2004) in one of my cupboards. It is now in the oven, but I can confirm that scraping the bowl and licking the rubber spatula remains as much a pleasure as when I was 5 years old.

The mix was in perfect condition and the brownies came out perfectly (they are still cooling off). Since I had bought the box in the United States, I presume it was manufactured there.

I new it! This expirey date thing is because tthey want you to buy the product again then forget to use it. I have just mentioned finding coffee over 30 years old. Still perfect.

This post really does not belong here as there was no baking involved but I am going to post it here anyway. Christmas prep for me as I guess for many has been affected by our Covid times. So today I was planning on baking my usual things mince pies / pastries for breakfast/ a complicated dessert for Xmas day ... but then I thought "sod it why bother ?" I then thought we do need a dessert for tomorrow ( I'm not even sure that's true as neither me or my daughter are particularly bothered about desserts but could not bear the thought of having nothing ready just in case) . In a fit of nostalgia I decided to make one of my childrens' fave things from the past - a choc refrigerator cake. It is a version for adults though so I added copious lashings of rum, stemmed and crystallised ginger, prunes and pistachios to the usual ingredients. If we do eat it I will serve with a rum cream. If we don't eat it I know someone who will

What a brilliant idea Lugg! I'm sure it will go down wonderfully. Alas, this year Mr. Tod is not making his famous strawberry trifle. It is all assembly and no cooking and just gorgeous but maybe we will do it on New Years day. Enjoy your Xmas cake!

I've been trying to complete a "Tidy up "task every other day and to my delight I found my long lost piece of A4 with a recipe given to me by a friend. It is PAMPOENTERT otherwise known as Pumpkin Pie - but not the American traditional pie crust and filling - No, this one I think is better described as a pumpkin pudding with cake-like consistency. All I know is that its is absolutely delicious and is an accompaniment to many meat dishes. Here South Africans serve it with a Braai/BBQ.
PUMPKIN PUDDING FOR A BBQ
3 Cups cooked butternut or pumpkin 3 Eggs 250ml fresh cream 1/2 cup sugar 3/4 cup cake flour 2tsp baking powder 3tbsp very soft or melted butter 1tsp salt Pecan nuts/muscavado sugar
METHOD Beat eggs, butter and cream very well then add dry ingredients and mix. When well combined add cooked cooled butternut, and mix well. Pour into a baking mould of your choosing and sprinkle cinnamon sugar(muscavado is good) with chopped pecan nuts over the top. The batter should be quite liquid. Bake at 180C for around 45min or cooked through. Cool and serve at room temperature with grilled or roasted meats or vegetables.

I am proudly coming back to this section of cooking as I had to see if I could compete with my sister's efforts of making a cake in her newly acquired Air-fryer! I had a chocolate Pillsbury box cake in the store cupboard so got right to it. The variation from the instructions on the box were that I only had two eggs instead of he required three, so I put a huge dollop of Hellman's mayonnaise in to substitute for the third egg and also used less oil as mayo is pure oil really. I added two tablespoons of brown sugar, a titch of salt and a tablespoon of pure unsweetened cocoa powder. The scary part for me was trying to get the temperature correct. Normal oven called for 180C and my Air-fryer booklet recommended 160C but for 300gr cake mix. I used 525gr and was only using one cake tin. I set it at 170C for 15min longer than asked for. It came out OK.

Tadaaaaa! My next Airfryer cake - Lemon sponge with vanilla icing and cranberries. I used a Betty Crocker "made in Dubai" cake mix. The icing was also hers. Dried cranberries.

Lagatta, there has been a bit of discussion around Airfryers but this is the one I have got. My sister has just bought one and this week we bought one for our son who already has the small Phillips version. He lent that to me but it almost did my head in trying to clean it. This one is as easy as falling of a log! tinyurl.com/4rznk3jeIt is just a glorified baby oven/grill. I cook almost all our food in it. People make the mistake of thinking its only for fries or greasy food. None of that. I've even made a stew in mine(in foil of course).

Kerouac - It can be a main for a vegetarian with a side salad or more vegetables. I served it as a vegetable dish with other greens and lamb chops. I can see it being served as a starter too.

Rich chocolate cake (4 layers) sandwiched and covered with whipped strawberry buttercream, dark chocolate drizzle and decorated with huge strawberries. I made it for a picnic we had to mark the 100th anniversary of our Daddy's birth.
