My husband's distant cousin who lived deep in the woods outside of Mooselookmeguntic, Maine got trichinosis from eating bear she had killed and skinned. Visiting them was an experience. I should think so. I there really a place called that? Amazing name.

We have a Lac Megantic in Québec, not far from the Maine border. There was a terrible runaway train accident in the town that killed many people a few years ago. Such names adapted from site descriptions by the native Abenaki people are common in the area. Megantic indicated a good fishing ground.
Mooselook seems to be a mishearing of an Abenaki name, according to Wiki, "Moose feeding place" (many such Indigenous names designate places with useful natural resources such as game, fish, native plants etc).
Sounds to me that the bear hadn't been properly cooked. Bear are omnivores, like pigs ... and humans, so perhaps more likely to carry the parasites.

After several years without being on the horns of a food dilemma I have had several in one week.
On the way to the lake cottage, I bought groceries in anticipation of hosting another couple for dinner. The pork back ribs I bought were frozen and hermetically sealed but I put them in the fridge to thaw slowly. And then the dinner ended up being a couple days later than I expected. The ribs had been thawed for days and smelled a bit funky (sort of sulfurous) when I put them in the pan to braise in ginger ale for 3 hours. (I did rinse and pat dry first.). Mr. Kimby finished them on the grill. They tasted fine and no one got sick. night. Tasted fine, and again no one got sick.

Then as I packed the fridge items into the cooler to go home, I found a package of ribeye steaks I’d intended to grill and forgot about. The use by date on the package was July 27. I assume they had been in the home freezer before going to the lake, but I really can’t remember. I know they’d been sitting in the cottage fridge for at least 9 days. Highly suspect, but they looked fine, still red and no odor, so I rinsed em off and seasoned em up and we grilled them last night. Yum. No tummy ache today.

And then as I searched for this thread to report on those two food (mis)adventures, I re-read the first entry and was reminded that I’d left a piece of cod in the oven from tonite dinner! Fortunately only 3 or 4 hours had passed….

Cooking food thoroughly generally eliminates any risk. It is just a shame when it is the sort of thing that one would prefer to eat only semi-cooked. Ribs are fine.
