Adjust the proportions for the amount you want to make.
Use any kind of firm cheese -- cheddar is traditional, but I used Emmenthaler in my last batch. Grate or whirl in food processor.
A jar or can of pimentos, drained. Add to grated cheese.
Mayonnaise to taste. Mix all together well & spread on bread for sandwiches. Wonderful served with pickles &/or apple slices on the side. You could also scoop out the insides of tomatoes, chop that & mix it with the pimento cheese and some croutons (optional) and put that mixture back inside the tomatoes. Top with grindings of black pepper.
The above is the plain, regular version which can be greatly improved by the addition of finely minced or crushed garlic and some chipotle mayonnaise. You could used chopped fresh chile instead or in addition to the spicy mayo.
If you wanted to be a real foodie, you could sear & peel red bell peppers & use in place of pimento. For another foodie treat, soft goat cheese could be mixed w/pimento & any of the other ingredients.

I think you have to have this soon after birth to really appreciate it. I've tried it various ways, even ho-made, and can't get with the pimento program.

The only pimentos allowed in the house in my youth were pimento-stuffed olives. And that was just for the color scheme since you couldn't really taste the pimento (nor did you want to).

Pimentos are a form of pepper, like bell pepper.

I think it sounds good bixa, I'll have to give it a try. Here they make a sandwich called ave pimenton - chicken, red bell pepper and mayo blended together - that is quite good.

Don't misunderstand me; I love red sweet peppers and pimentos, raw or sauteed or (best) grilled. It's the process cheese spread that I'm not crazy about.
Besides, The Rules of Southern Eating require that it be served on "light" bread; that is, packaged white bread.
Oh. Rereading the OP, I now realize that Bixa's Pimento Cheese Spread is made from real, not processed cheese. Discúlpame, por favor.
