I made a salad with slices of Granny Smith apples, red onion, pieces of smoked herring, mixed with pepper and fresh cream. A friend from Dusseldorf taught me how to make it many years ago.

I've had that (don't know the type of apples) and it is so good. By fresh cream, do you mean fresh liquid cream or crème fraîche - or some Germanic variation of those things? By the way, I wasn't putting down the idea of putting bacon or lardons in salad. Your photo just seemed a bit overdone and VERY salty.

I would normally use crème fraîche, but I had some liquid cream that I needed to use. The only difference it made was that it tasted a little sweeter, obviously.

Or one of the first autumnal ones! It is now, late in the salad season, that we get the flat Chinese cabbage that is very tender and lovely in salads.
I had salad every day this hot summer and am just starting to make soup for daily consumption again.

Considering the heat and considering that the recipe calls for and hour and a half of boiling (with the attendant fun of peeling afterward  ) in order to get less than a cup of product, I think this would be the time to reach for canned or bottled beets. I'll be curious to know how this salad turns out.

Yes, I see that Bixa, but you don't have to be next to the stove while things bubble away . Just have check now and then. The oven heat is what I cannot abide in 39C (YESTERDAY) heat. And, my kitchen is air-conditioned with the rest of the house! I will be making this salad this week and will report back my findings.

If that is correct, here is the salad I had for dinner the other night: smoked mackerel, goat cheese, tomatoes, radishes, beets, cucumbers. Ha! I actually knew that from looking through all the previous posts here. I thought to myself…."Kerouac is going to tell me he is not fond of beetroot" - You did not disappoint!

I had a salad for dinner tonight even though the weather and my personal desire were less conducive to a salad than usual. My cucumber had an urgent need to be used, so I fixed it with a tomato, a grated carrot and a stock of grated red cabbage. It was all right but just not the right season. In order to add a bit of nutrition (protein) to the meal, I also had some camembert but I did not put it in the salad.

That sounds really nice & would give me another excuse (not that I need one!) to use my new ovenino. I can get everything except the edamame beans. Not sure about the watercress this time of year in my local market, but maybe purslane could stand in for the missing ingredients with perhaps some chopped fresh swiss chard.

I am taking some savouries to our family lunch tomorrow. First are water crackers topped with circles of green cucumber...onto that is a segment of smoked salmon topped by a blob of cream cheese and a couple of "match-sticks" of nasturtium leaf from my garden to decorate.
Do you eat nasturtium leaves or flowers. We had nast. leaf sandwiches as kids and the bright flowers look good in a salad even now.
My other salad is a Singaporean crunchy noodle one.
Chinese cabbage or savoy cabbage shredded finely 6 green spring onions cut 5cm long 100g lightly roasted almonds or pine nuts 100g crunchy fried noodles.
Dressing... 1/4 cup white vinegar 1/4 cup caster sugar 1 tablespoon soy sauce 2 teaspoons Sesame oil (Opt) 1/2 cup olive oil
Mix 1,2,3,in a bowl. Mix dressing, add to bowl, toss and mix.Add noodles just before serving. I think it is better with little or no Olive oil and use sesame to your taste. YMMD

I added a few nasturtium flowers in yellow and orange to decorate. Looked and tasted good.(Catty comment follows...)The other women had brought shop salads which were at least 36 hours old when they were eaten. I am a hopeless cook/ food preparer so forgive me for one small boast.

Used as a decoration for the plate (with the carrot carved like a daisy and tomato twisted to resemble a rose.) Politely pushed to the side of the plate and not eaten.
