I like Aubergine pickle.
Cauliflower isn't everybody's cup of tea but add a couple of bay leaves to the cooking water and it tastes so much better.

Apparently due to our weather there will be a big shortage of brussels sprouts this Christmas so they are recommending kale instead Frankly they can keep both of them.

I reconciled with carrots, which I think was the first thing I mentioned on this thread, but anybody who wants them can absolutely have all of my beets.

Home grown carrots are so much better than shop bought. They actually have a flavour.

easier to say which ones i'd like to keep, i suppose - like green beans, lentils, and some others ... could easily go without cooked carrots but like raw ones. i suppose i could go without aubergine, but i don't eat it that often anyway. i suppose i could also go without zucchini or broccoli, though i like it when i eat it, i never feel like "i really want some zucchini now", same goes for a lot of others, too ... not so crazy for some of the "soup" vegetables like celery root or leek - but without them, soups might be missing something ... haven't had kohlrabi for a while, so i suppose i'd be fine without it, too ...

I really like aubergine. But the type I prefer is pale violet and cream skinned, and the flesh has a creamy texture. Courgette is rather bland, but can add to a mix. Melanzana is important in Sicilian cookery: sapori.sicilia.it/2017/06/viola-e-tonda-a-palermo-la-chiamano-melanzana-tunisina/ In Palermo, they are called "Tunisian aubergines" as they were introduced by Arabs (Arabo-Berbere) and Tunisia is their closest African neighbour.

I really like all vegetables, although there may be some exotica out there I wouldn't care for. I would have said that I could live without brussels sprouts, as I never could understand how some people got excited about them. But this summer I got some fresh ones in Amsterdam and when I cooked them up, they were absolutely wonderful.

is rhubarb a vegetable? thinking about it, i suppose it is ... just always "felt" more like a fruit to me, as you put it in cake, or eat it raw with sugar ...

I dislike Brussels sprouts, they come from a hellhole, what do you expect ? I disliked all mushrooms and now love them. I love carrots. In France it is said they give nice buttocks, whilst in Belgium we say they give good and shining eyes. We are right of course. Never seen a rabbit with spectacles...

Just to prove that I am in permanent contradiction with myself, tonight I baked a dish with aubergines and courgettes. However, it is not impossible that I will throw away the leftovers (different thread) in a couple of days.

It's easier to say which vegetables I like! What I absolutely dislike are beets, pumpkins, sweet potatoes, daikon and vegetables from the sea.

Oh my god, I adore seaweed and salicornia. It is probably because I will eat anything that comes out of the sea (except plastic when possible).
