I'd love to know how Tony "the Dragon" Dragonas, who has a middle eastern food cart at the corner of Madison and 62nd St in NYC, marinates that chicken he grills, then slices over lettuce and yellow rice, douses with a tsatsiki, and serves with a flatbread on the side. I think he marinates it overnight. The man is a char-grilled chicken genius.

Great pic Lola!! You should stick it in the Local Color thread too!! There was a food vendor on the West side in NYC when I lived there who served up the best Kibby (cooked)!!! I would cross town from the East side just to go have his fare.

You are too good, casimira. I'm almost tempted to pass it off as my own and save self the embarrassment of saying I neglected to credit that photo. I snagged it from a "best food carts NYC" website because it reminded me of the experience, and that's how I'd found Dragonas at all.
I like the photo because the workingman clientele simlar to when we were there at ~ 2PM on a weekday, and not what you might expect at Madison and 62nd. While I was waiting for our order, observing the prop.'s technique, a young man came up, gave him $5 and said, "I owe you five, Tony, " then left.
