Here is a simple recipe for a Chinese (or Chinesish) beer-braised duck. I bought a frozen duck on promotion at a major supermarket; those are Brome Lake Ducks, which are local Peking ducks. I prefer other (more expensive) varieties to roast, but these are fine for braising, and making yummy duck preparations. yireservation.com/recipes/beer-braised-duck/I don't think I'll add any vegetables at this point beyond perhaps some onion in addition to the garlic and ginger. I don't have any yam cake on hand, it is easy to buy nearby but I don't particularly like it, and I have a bag of sweet potatoes (the orange kind) if I feel like adding them in. I used a bottle or Boréale Rousse beer, decent local beer. www.boreale.com/joomla/index.php?option=com_content&task=view&id=21&Itemid=58&lang=engI have everything else on hand; it doesn't call for any obscure ingredients.
