The recipe shown resembles something I'm making: a sort of galette with flours, egg, cooked quinoa, a grated courgette/zucchino and odds and ends of vegetables. I added a small, finely-chopped red onion, and will no doubt add in some rocket (roquette, arugula) as a stand at the market was selling huge basket of it and I'll never eat all of that in salads. I used more egg, and part of the flour was unbleached organic wheat flour, but part was chick pea flour (known by various names through the Mediterranean and South Asia). Even a bit of corn flour (very fine cornmeal, not cornstarch). Basically I improvised. I also added some caraway and cumin, and a bit of very mild Portuguese red pepper sauce. You'll really have to try one to get the texture and thickness of your batter right. These are very high in protein with the quinoa, egg and chick pea flour, and could make a vegetarian dish for any meal. savory-bites.com/2012/05/zucchini-quinoa-pancakes/I do note that other than potato pancakes, we don't seem to have a pancake, crêpe, galette and family thread.
