I thought these looked interesting. www.dianekochilas.com/chick-pea-fritters-from-rhodes-pitaroudia/ Because of limited meat supplies for long historical periods, and long "Fasts" prescribed by Greek Orthodoxy, there are many traditional vegetarian dishes in Greek cookery. These look quite different from falafel, and don't require deep frying. The website might merit a glance too, though of course she is pushing her cooking lessons in Ikaria.

I happen to have a package of chick pea flour which is ground too finely for my taste, but I will figure out something to do with it sooner or later.
