This recipe is one my aunt used for many years. It's quick and easy, but can be a bit tricky. For those of you, like me, who don't use a candy thermometer, here's a tip. Keep a small bowl with ice water on hand and add a few drops of fudge when you think it's about ready. If the fudge becomes fairly firm when dropped into the water, it's ready. The recipe can be doubled, but You should also double the cooking time.
1 cup sugar 1/4 cup milk 1/4 cup unsweetened cocoa 2 Tablespoons butter (melted) Pinch of salt 1/2 teaspoon vanilla extract
Mix together all ingredients except vanilla. Bring mixture to a boil over medium heat. It is important that you stir constantly throughout the cooking process. Cook 3 minutes (gradually reducing the heat so the mixture continues to boil slowly). Remove from heat. Add vanilla (I usually add some chopped nuts at this point, too) and stir well until the mixture begins to slightly cool and thicken (less than a minute). Pour into a greased pan to cool.

Thank you, Bixa, but it should come with some sort of a warning.
In the batch I made the other night I used dark cocoa because that's all I had. It was great, but I was up until 4:00. I'm sure the fudge was a partial contributor.
