So I bought a small frozen duck on sale at $5.49 CDN kg (do the math). It is thawing in my fridge. But duck is more a meat we'd associate with chillier weather, and it is beautifully warm, even hot, right now. I'll probably braise it anyway, because a duck won't fit into my little convection oven, and frankly I don't feel like butchering it and roasting it in quarters. I suppose it can become the stuff of salads, empanadas or whatever. Ideas?

Finally, I just braised it in concentrated stock, and plan to break it down to use in salads, to put int stir-fries and other uses.
