When I first saw the title, not noticing that this was a Galley post, I honestly thought that "Mexican Mole" was some kind of game, perhaps online, and tod was rying to figure out how to win it.

I deliberately stuck a fork in my eye when I read that recipe.
It's infuriating when people like that mislead others who honestly want to learn about another cuisine. Maybe her cheat would work to give a decent approximation of a mole's taste, but to use it that way in nachos is just vile.

It's a slippery slope: First faux Chinese food then faux Mexican food...we should not be surprised when there's a faux-leader running for President. Bixa, the piñata vendors (in LA) are carrying ones of Trump...and I don't think it's because they support him.
On the recipe: I'll start out by asking: 2 cups onions??? Tortilla chips for thickening? Oregano but no cumin??? (I confess I buy the mole sauce that comes in the jar with a pry-off lid that can be used as a juice glass after....from Mexico) And why would ANYONE want mole nachos?

Ha ha ha ha!! Bixa I am still laughing....errr, sorry but I had half expected your reaction! So, I am going to forego this recipe and guess what....I am going to try it in Paris. Yes, the capitol city of all cuisines...cough cough - Well until I arrive in Mexico proper! I do have my trusty Mexican cookbook as you know and there are several mole recipes. I was surprised there are different mole`s. I have always thought it was the one made with chocolate and that's that. Maybe I will attempt the cookbook first. All I'm trying to do is get a handle on the taste before I order it and have to pay for something I cannot eat.
I am so grateful to Lizzy for her funny thoughts on a mole....don't blame you Lizzy!
Oh, Gabriele - don't be surprised if I tell you we ate faux Chinese food for years and years before the real deal chinese came to town. That is why when I'm in Paris I try to live on Chinese food every other day. Mr.Tod doesn't know it yet but I have the restaurants lined up so we will be in overload by the time we leave.
