I think the Hebrew letters simply indicate that the lamb is kosher and can be eaten by observant Jews.

Quite a few products now are marked both kosher and halal. Not fresh meat though as although the slaughtering rituals are extremely similar, there are some minor differences that are imperative among the strictly observant.

I'm neither Jewish nor Muslim and not at all observant... just interested in cultural quirks.
