I'm a tad confused Mick. (The previous post is from 2020 and yours today 3 years later) I could make some wild guesses as to what you "remove the stalks and peel away the skin" from. But then I become confused about what you then place in the oven.

One of my favorite light meals is something I used to do when I was able to grow vegetables. I'd go out & pick what was ripe, which might be a tomato, a couple of okra, maybe a green bean or two. Those would go into the house to be chopped & thrown into a hot skillet with a little olive oil. Toss them around for a half minute or so, then turn off the heat & cover the pan. While the vegetables finish cooking in the stored heat, cut up a little bit of cheese & slit open a pita. Spoon the vegetables & cheese into the pita, then put that into the skillet, turning the heat on high. Let it toast a little on both sides, then eat.

I make my own marie rose sauce with blitzed fresh tomatoes ( I hate ketchup) , creme fraiche and Tabasco or whatever chilli heat I have in the cupboard and some lemon juice. Then shredded iceberg lettuce is a must for me with this dish. Served with a good bread.

Shrimp cocktail is one of those items most Mexican restaurants here offer on their menus, but one I almost never see obvious non-hispanics having. I think it's probably because they don't come with rice and refritos.

When I was a kid it was. Now the only menus I see them on are at Mexican places. The Mexican ones are better and more interesting than the ones I remember from the Jurassic Era.

I'm in the middle of a big project & don't want the hassle of cooking & cleaning up. However I don't want to graze & snack instead of having balanced meals, nor to go out for every meal. The obvious solution is fruit and salads. I like to buy ready-to-eat grapefruit from the local produce vendor. It comes in rectangular plastic clamshells which I'd ordinarily throw away. But yesterday I realized that the container would make a nice plate & the few grapefruit segments remaining in it could enhance a salad. Accordingly, I added raw salmon cubes, tomato, & onion to the segments in one section of the "plate", and made a rough & ready raw pea & boiled egg salad in the other section. That was lots of protein & plant nutrition in one satisfying meal.
