Here's one for a

This is a great, easy flat bread recipe that makes a delicious side dish to any meal. These can be used for making pita sandwiches, pizza or pretty much anything.
Prep Time: 15 minutes Cook Time: 5 minutes
* 3 cups all purpose flour
* 1 cup ice water
* 3 tablespoons shortening
* 1 tablespoon salt
* 2 teaspoons baking powder
* pinch of baking soda
Combine all ingredients and form into a dough. Cut into 4 or 5 equal pieces. Roll out to a thin 8 inch circle. Prick the surface of the dough with a fork and cook on an oiled hot griddle. Turn with a spatula. Watch these flat bread disks closely because they cook fast. Serve warm.

comment: I am so surprised that something made with baking powder could come out so perfect. you can make 5 thicker breads or 10 thinner ones in an 8" non-stick pan (i added no oil to pan, only wiped clean/paper towel as flour accumulated). both sizes are very good. i substituted olive oil for the shortening and used medium heat. i can't wait to try on the grill outside.

Chapati is an unleavened flatbread made with whole wheat flour. It's toasted on a grill or griddle until golden brown spots form, then brushed with melted butter.
Prep Time: 25 minutes Cook Time: 3 minutes
* 1-1/2 cups whole wheat flour
* 1/2 cup all purpose flour
* 1 tsp. salt
* 1 Tbsp. vegetable oil
* 1/2 to 3/4 cup warm water
In medium bowl, combine flours, salt, olive oil, and enough water to form a soft dough. Knead the dough ten times, then cover tightly and let stand for 1 hour.
When ready to cook, form 10 balls from the dough. Roll out the balls on a lightly floured surface into 6" circles.
Heat an ungreased griddle over medium high heat. Two at a time, lay the circles on the hot griddle. Cook until the dough starts to puff slightly, then turn and cook until light golden brown spots form. Remove chapati to a kitchen towel and brush with melted butter. Serves 8
