Pork chops can end up being a bit dry and dull but I came across this recipe for a “rub” which I tried last night and was delicious and the chops remained juicy. I cooked them in the oven fir 30 minutes but the recipe suggested 15 minutes in the oven and about 8 minutes under the grill but I couldn’t be bothered,
1 tsp Worcester sauce 2 tbsp tomato ketchup 1 tbsp soy sauce 2 tbsp brown sugar 1 tsp olive oil 1 minced clove garlic 2 tsp apple cider or clear vinegar . Not balsamic.
Mix all together and slosh over 4 pork chops and cook!

Good to know! You are so right about the dry & dull tendency, but your recipe would make really good, almost instant barbecued chops.

Minus the 1st and last elements and less sugar and it is the "go to" sauce we used in my Bali restaurant. I suppose you used sweet soy (kecap manis) not the saltier unsweetened one (kecap asin). We used the manis version...the flavour of Asia as far as I'm concerned, and a great addition to soups and stews etc that need a bit of a 'lift'.

Questa, what was the name of your restaurant? I have a good friend who lived in Bali for 18 years. He left there a little less than 2 years ago. I wonder if you times there overlapped.

The restaurant was called 'Travellers Cafe' and was at 16 Jalan Hanoman, Ubud. It is now a beauty spa as the Govt tries to get rid of the beach-bum, hippy groups image and make it a 5-6 star family destination. Where did your friend live?

Back to the pork chops for a mo - Mick, That recipe sounds perfect for Hawaiian pork chops. Adding rings or chunks of tinned pineapple to the cooking chops would make it almost dinner party faire. Served with a spicy rice.

No please Kerouac....what about all those magnificent crispy sweet 'n Sour pineapple pork at just about every Chinese restaurant.... If not a fan then please tell me how you like to eat pineapple?

Ubud is a special place, beloved of all the gods of Bali. It is at the meeting of 2 main rivers and magic there is strong for healing. It still has its own royal family and huge ceremonies when one of the gets married or cremated ( crowds come up from the south to watch) The town has grown from a cluster of 10 small villages to a major stop off and the seat of music, dancing, painting and carving and food. The town is in the mountains, so cooler and highly fertile, The families who have lived there for ages are rich, first from owning such good land, then from selling or building tourist infrastructure. Every evening there are several traditional dances, gamelan music, stories from their history, shadow puppets and daytime brings many art galleries, private or Govt maintained and dozens of scenic drives. The people of Ubud are polite and welcoming. They sell in the markets, not by pushing their goods in your face. Naturally they will bargain and you will lose out but come away thinking you have won. Their religion is the ruler of all their lives, from making offerings to family gods early morning to avoiding cross roads or leaving the home at noon. There are good and bad spirits who must be appeased for the sake of the community. It is a lovely place and I can understand brother fumi and friend bixa loving it.
