I decided to try this last night. To begin, you chop an avocado into small cubes and find an acceptable piece of fresh salmon.
Finely chop some red onion, ginger, cilantro, celery (you are supposed to use chives but I didn't have any) and the salmon in small cubes. Meanwhile, you have cooked some sushi rice of course.
Delicately mix the rice and avocado with some rice vinegar and a spoon of sugar. Mix the other ingredients in a different bowl.

Put some of the rice and avocado mixture on a sheet of plastic wrap. Put some of the salmon and other stuff on top.
Use the plastic wrap to make a ball and squeeze it.
Keep going until you run out of energy or ingredients. Super easy! Garnish with sesame seeds or other items that inspire you.
This was my first attempt and I made some mistakes, but next time will be perfect.

You have inspired me Kerouac. I like sushi but my son LOVES sushi, sashimi etc etc. I tried to make the roll up kind but everything was too big but I think I would have better luck this 'ball' way. PS; your final photo looks like a Master Chef attempt.....not too shabby at all!

Ok, this is my attempt. I don't know what your mistakes were Kerouac because I must have made some along the process but the rice is very forgiving - overcooked mine a bit.... I watched a few videos and decided not to mix the avo with the rice as the rice was very gooey. Instead I laid the clingfilm in a muffin tin and pressed the bottom half of a lump of rice into a hollow ball , then added the avo, ginger, chllies, cooked prawn meat (too lazy to go and get salmon) cilantro and finely chopped spring onion. Then put another lump of rice on top and drew the clingfilm together and twisted tightly. I laid a small piece of nori paper under each one for easier lifting off the plate. I'm going to do it all again with different fillings and also shallow fry a few. ONIGIRI
