"Herbes de Provence" is my main exception to preferring fresh herbs. It is just so easy with no nasty bits to spit out.
Going back to potatoes, I managed to snag a litre of "frying oil" the other day when all of the shelves were empty. Potatoes will suffer from this.

Nothing spectacular...I had some leftover mashed potato from yesterday...(I always make too much!). So today I put it in a bowl with an egg, black pepper, handfuls of strong cheddar, scoop of plain flour and a pinch of dried oregano. Squished it all together then used wet hands to make walnut sized balls out of the mixture. As it was quite sticky i just rolled the balls in golden breadcrumbs (if they'd not been sticky I'd have dipped them in flour, then egg, then breadcrumbs...but I couldn't be bothered!) . Put the balls on a lined baking tray and blasted them in a hot oven for 20 minutes...turned them over half way through cooking...
Served them to the chaps with their dinner (baked ham, salad etc) as a side dish...they LOVED them.
