I don’t know about you but if I do a stir fry I lazily buy a sauce from the supermarket. But tonight I made my own! And it was gooood.
6 tablespoons dark soy sauce 2 tablespoons sesame oil Juice of half a lime Grated clove of garlic Grated 3cm ginger Pinch of chili flakes
Put in a clean screw top jar, shake up and use.

I admire how intrepid you are.
Since my Chinese supermarket has at least 50 different stir fry sauces available, I just keep filling my special spice drawer with them since I actually do very little stir fry.
(The reason for this is that it is impossible to stir fry for just one person. So if I do it, I have a quantity for at least 2 or 3 people and as you probably know, it is disgusting as limp leftovers.)

What a good idea! I always make my own sauce for stir-fry, but never thought to do that trick with the jar. I will from now on!

Lasts 3 days in a fridge or freeze for whenever.
Incidentally stir fry was chicken, a pepper, spring onions, mushrooms and baby sweet corn plus noodles. All stuff from the fridge. Noodles were on their use by date from supermarket.

I do something similar Mick, but I only make enough for one meal as OH will only eat one stir fry per week....

I do the same as Mick as well but will deliberately make too much for one meal because we then use it up over the next few days by having it as a dipping sauce for Summer Rolls, Spring Rolls, samosas, cabbage fritters etc. That type of thing. Often put some sweet and sour chilli sauce in it as well never mind a splodge of Worcester Sauce.

Oh I love a stir fry , have one at least x1 per week . Never buy the supermarket mixes though just use whatever I have (But ... I am a fan of the tubes of ready prepped ginger/ lemon grass/ chilli/ garlic etc and always have those in the fridge plus soy sauce/sesame oil in the cupboard)
Oddly I am the opposite to K2 as part of the reason I love a stir fry is because I can make the perfect amount for one person .

My eldest was visiting on Saturday and I always do a buffet (that's what the sweet rolls and cheese straws were for). I made a dipping sauce for some spring rolls. I used ketjap manis as a base and added grated ginger, grated garlic clove, chopped spring onion and a finely diced red chilli (fried the onion and spices gently before stirring through the sauce)...My son LOVED it and was dancing around the room in delight!...He took the leftover sauce home in a jar along with the spare spring rolls. Easily impressed

Lugg I don't like the supermarket prepared stir fry mixes either...I much prefer to choose and prepare my own veg.
