This recipe serves 10 people. Ingredients : - 1 kg fresh or canned tomatoes - 2 green peppers - 1 kg de carrots - 1 kg courgettes - 1 can of chick peas - 2 aubergines - 1 kg of couscous semolina - 2 large onions - olive oil - couscous spice - a big chunk of butter - harissa For the sweet sauce : - 1 onion, 1 tablespoon of sugar, 1 tablespoon of cinnamon powder Meat : - 800 g beef - 800 g mutton - 6 to 8 pieces of chicken Preparation Brown the beef and the mutton in the olive oil with the onions. Add the aubergines, courgettes, tomatoes, chick peas and carrots. Add salt and pepper. Add the spices and 50 cl water. Simmer for 2 to 3 hours. 30 minutes before serving, add the chicken. The sauces : Spicy sauce... Put some of the cooking broth in a bowl and add harissa. Sweet sauce... Chop the onion and cook it with the sugar until it browns. Add a ladle of cooking broth and the cinammon. For the semolina : Microwaving is the easiest method and just as good as tradtional steaming... Put the couscous semolina in a microwave bowl, cover with boiling water and add some salt. Cook in the microwave oven for 5 minutes. Mix the semolina with the butter before serving. If there is any wait, cover the bowl of semolina with a plate. To serve the stew, put couscous semolina in the bottom of the plate and ladle broth and vegetables over it. The meat should be presented in a separate platter.

Since our only vegetarian at the Tuesday potluck has crapped out on us 3 weeks running now, we may move toward serving meat. In which case this will be a great introduction. I would hate for the first one to be a rack of ribs and have her show up.This is a little more gentle.

Well, you could always cook the meat completely separately (although the broth wouldn't be as good), and the meat eaters would combine the ingredients in their plate.

Yeah, I'm not a big meat eater, but good broth or stock is a hard thing to make vegetarian. If nothing else, I make it with bones. Unless it is agreed that a) the main dish is vegetarian or b) there is a fully vegetarian option, I'd tend to agree with kerouac, though I'm really fussy about accomodating ethical or religious beliefs, or allergies. Though I have endured the horror of someone on Montignac or Atkins or something dissecting a dish I'd made (and I don't typically make very fatty or stodgy food). Please tell me beforehand and I'll be pleased to accomodate you, I rather like the challenge.

Anyway, when serving couscous to first timers (especially American ones), it is often safer to just make chicken couscous if you're not sure how they will react to mutton. But it would be a shame.

Now that I have made my pumpkin soup, I am preparing to make another favorite autumn dish.
However, since I am feeling really quite lazy, I am happy to say that the couscous vegetable mix can be bought in France in big cans or frozen in a bag.

Funny that you should revive this, because last night I came very close to making couscous for dinner. Then I thought -- "nope, too much trouble after a day at the office!" -- and decided that I will make some next week.
