Iain! A Paul Weller AND a Ben Folds fan? My already high regard for you has just tripled!
I'll assume we're going to skip the obvious ones (Experience, Cream, ELP and a few others that I may throw in if they don't pop up) and offer up:

There is something about a 3 piece unit playing live that is captivating. Maybe its that they all have to do a lot of work to make the whole thing happen. On a tangent, I had the opportunity of seeing Nirvana live when they were still fairly new in the early 1990s... and turned it down! Never got the chance again... bugger!!!
I am going to post some Jimi Experience in any case, They are one of the benchmarks IMHO.

What's neat about a trio too is that because it's so stripped down, each member has to be very, very good at what they do. The three that I mentioned (Experience, Cream and ELP) each have a drummer in my "Top 5 rock drummers of all time" list. Many people would agree with the Carl and Ginger choices, but I think Mitch is horribly underrated.

The Police were pretty good. I'm surprised that one took this long to show up. They were damn good!

OK, I am cheating because this was not my suggestion. It stems from a conversation about "real" music on Saturday. Anyway... Best 3 piece...ZZ Top?
Its a great Vid too!

imo, CSN = great band, CSN&Y = way better band..
And speaking of Neils I think Rush is a great 3 piece band, and Neil Peart is an awesome drummer.
