Tonight is my veggie potluck night and I forgot until about 10 minutes ago. I have available (don't want to run to market) some fresh beets,arugula,baby carrots , some citrus, apples, potatoes,celery.onions,not much else. Any ideas?

How many dishes do you need to make?
If just one, you could do a composed salad.
Other ideas: something waldorfy w/the apple & celery; something harvardy with the beets, carrots & citrus; that roasted potato thing you do (which you need to share, please!); maybe a greens & onion salad, too?
Depending on how strict the guests are, you could make a Spanish tortilla with the potatoes, onions, & some eggs.

I'm roasting the beets as we speak and will add the granny smith apples, bermuda onion,arugula,walnuts and toss around some vinaigrette made with the satsumas. Wish I had some decent cheese. Someone else is doing tortillas with a kimchee/black bean fusion thing from last Wed. Times Food section . The roasted potatoes really need to be served straight out the oven.Thanks.We haven't had it for 2 weeks because of Carnival...

I'd go for a salad as well. Don't know if this has been asked before, are you very vegetarian or just a little bit?

No, I'm not vegetarian at all. A group of neighbor friends started doing this Tuesday night potluck thing about 6 mos. ago, I think only 3 or 4 of the core group are true vegetarian so we keep it veggie which is fine with me. There was one night that someone had an optional duck gumbo on the stove for the carnivores.Some very interesting dishes I probably wouldn't think to prepare are served.
