Does anyone have a good receipe for gluten free cupcakes?
Grandaughter is having her 10th birthday party and I have been nominated to bake the cakes. One of the guests is gluten intolerant.
I know I can buy cake mix and most online receipes have a long list of ingredients that I will never use again.
I can get G F Flour and Icing sugar. What about eggs and butter are they gluten free? or doesn't it matter.
I have never had to cater for alergys so any advice greatly appreciated

I don't know pookie,but will look around.A good friend and neighbor has a bakery,I will ask her. She's probably encountered this as she caters birthday parties.When is it?

Thanks Casimira. It is in about 4 weeks. If I don't have any sucess can go with the cake mix although I would rather make myself.

We have a grandson who is wheat intolerant. Poor boy cannot have chocolate either. Mrs Faz makes nice little cup cakes from Rice Krispies. If you want the recipe I'll get her to post it.

Bazfaz that would be great.I can get Rice Krispies here. We thought of asking the mother of child but it is school holidays here for another week so won't see her.I want to do test batch before the day
The cup cakes will be the Birthday cake (in cup cake stand).
auntieannie I can get Gluten free flour here so thats not a problem......Thanks anyway.

Mrs Faz here....I am not sure this is what you are after, but it's certainly a delicious gluten-free treat, and kids love making them. Very simple. Melt chocolate squares, butter and golden syrup together, stirring well. Quantities are not very important! Depends how many you want to make. Pour in rice krispies, again stirring well, until they are all well coated with the chocolate mixture. Scope into individual paper cup cake cases (anchored in bun tins so they don't slide around) and leave to set.
I will ask my daughter for further gluten-free baking ideas...so watch this space.

Mrs Faz here again. My daughter has just sent through her gluten-free birthday cake recipe, made last week for her daughter's birthday.
"I just use a nomal recipie. I made a Victoria Sandwich for Kate's birthday: 100g 40oz butter/marg 100g 40oz caster sugar 2 eggs, lightly beaten 100g 40oz Gluten Free self raising flour, sifted 1tsp Gluten Free baking powder (most of them are anyway) Strawberry jam for the filling sifted icing sugar on the top Cream butter and sugar, gradually add in the eggs adding a little of the flour to prevent curdling. Fold in remaining flour. Divide into two 6 1/2 or 7" greased cake tins. 180'C 20-25mins It got demolished fairly quickly so it must have tasted all right."

Thank you Mrs Faz .The Victoria Sponge will be perfect. We make the rice crispie ones here without the golden syrup and butter.Add coconut and copha, instead ,sprinkle hundreds and thousands on top.They are called Chocolate Crackles Thanks again,will be sure to let you know how it turns out

Everything at my sister's place has to be gluten-free because hubby and both boys are wierd selliac ceilliac gluten intollerant.
Sis uses an additive for gluten free flour which makes it act like normal flour and I have found a store in Watford that is just totally full of gluten free cake/muffin/other mixes.

Just found out she is alergic to dairy as well. Time to consult the mother me thinks!

Pookie, good luck with the dairy/gluten allergic folk. It reminds me of the difficult rime we (I) have every summer catering for one family with gluten and dairy intolerance. Also with the father who won't eat fish, rice, tomatoes and some other stuff. And the mother who doesn't like pork.
