I would call that pork skin or pork rind but maybe there is something different about it.

I would call them pork rinds. I think there is another English name like crackling or some such.

It's chicharrón here. The meaty pieces are called viuces.

ah, chicharrón in peru too - if that is the same thing, but they have something called chicharrón anyway that might be this...
