What's the big deal with Japanese Panko bread crumbs? My Mom paid extra to get a box of this at the local supermarket.
When I was preparing the crab cakes, I couldn't at first find the Panko. Such a tumul! Later, I located them in the downstairs pantry. They will be used to coat the crab cakes. The "soft white bread crumbs" called for in the recipe are made from Pepperidge Farm Hearty White Bread, crusts off, crumbed in the food processor.
Why couldn't I have used the same for the coating?

Yes, this panko craze is a mystery to me. Probably all the more so because I do not seek "crispy" or "crunchy" as desirable attributes of my food. I don't even like crispy french fries.

Mockchoc sent me some Panko. I have coated some stuff for frying and it is good. K will not be impressed but it stays crisp for longer than the usual breadcrumbs I make in the processor.

It is definitely crispier than regular bread crumbs, which I like. I haven't been able to find it for sale, lately, though.

Phew. I do prefer crispy if bothering to deep fry which is rare. If nutrax agrees then I know I'm right. End of subject

Is the crispness of panko because that coating absorbs less grease? That would be a plus in many ways.
