As per the "coconut milk" thead...
This is from Tommy Tang's "Modern Thai Cuisine"
Spicy BBQ Chicken with Sweet Chili Sauce
1 1/2 cups coconut milk 1/2 cup chopped garlic 1/4 cup fresh ginger 1/4 cup olive oil 2 T. Thai fish sauce 2 T. curry powder 1 T. black pepper 1 T. white pepper 1 T. sugar or honey 1 t. turmeric
2 chickens (about 3 pounds each) halved (I use a dozen or so thighs)
Gently prick chicken all over with fork (I actually make little slices with a sharp knife). Mix all ingredients and add chicken - let marinate overnight.
Heat oven to 350F. Place chicken on baking tray and cook until partly cooked, 20 - 25 minutes, then finish on BBQ grill.
Serve with Thai Sweet Chili Sauce. There's an elaborate recipe for sweet chili sauce, but I just use Thai Sweet Chili Sauce out of a bottle - it's just as good.

It looks a bit 'adjusted' to me, Imec. I'd leave out the coconut milk and probably the fish sauce as well. Instead of curry powder try using just turmeric, I suspect it's just the colouring they're after. Curry powder would give it a curry taste that you're not really looking for. This what it looks like:

The author states right up from in his book that his recipes are not meant to be authentic - hence the name Modern Thai Cuisine. He actually borrows from all sorts of cultures to "adjust" his recipes - even using things like cream. I've made this recipe before and it is quite remarkable - it is clearly not the traditional Thai BBQ I have eaten on the street in Bangkok though (nor is it meant to be).

I am reminded of African recipes, ALL of which say to add a Maggi bouillon cube to anything being cooked. I don't know what year Maggi products appeared in Africa, but that is clearly considered to be a major culinary 'progress' for the people doing the cooking.

The world is split in half again, except in Europe where we use both Maggi and Knorr. I have some Knorr products in Chinese packages, though.
