Looks like a bunch of horseshit to me, although I can sort of see what she's getting at.
Yes, there are indeed some Ye Olde Restaurants in France, but I think she is confusing consciously created tourist traps with authentic regional dishes. This woman needs a severe interrogation about what brought this on.

I barely got further than the ridiculous remark she made that French provincial cooking was created in the 1920s and 30s. Why should anyone read further when the writer displays such ignorance?

Why would she consider Hawaiian cuisine 'regional'? Because it's a state in the US? And regarding French RC, I think she's on the wrong track. If she'd known anything about the Lanna cuisine of northern Thailand she should have used that. That is something Chiang Maiians invented for tourists...
