We had a real Mediterranean dinner tonight on the terrace. I loved the starter. It was a halved large red pepper, the cavity filled with fresh basil, home made tomato sauce, anchovies and black olives, drizzled with olive oil, baked (before we had a swim in the pool) and served cold.

That sounds good. I have heard of quite a few grilled pepper dishes from the Southwest (of France) that are stuffed or garnished and served cold, and I have never come across one that didn't seem delicious (maybe because they don't stuff them with fruit).

Who stuffs them with fruit? That sounds disgusting. Peppers are sweet enough already.

I loved bell peppers stuffed and baked. The last time I made them, I found I enjoyed them just as much cold as hot.

I'm thinking of a dish for Kerouac. Maybe red peppers stuffed with rice, pine nuts and apricots.
