I have some chicken thighs that will go in the oven. It's the idea of the golden brown roasted skin that makes me drool. I could just as well throw away the actual meat (but I won't).

I'm making eggplant parmesan for tonight's supper. I got some eggplant from a friend who has a plot in the neighborhood community garden.

I guess I am really a carnivore, because I know and like eggplant parmesan, just like I like moussaka or ratatouille, but there is no way for me to ever get excited about them. I would be a rather unhappy vegetarian and yet I regularly have vegatarian meals.

Moules frites !
Mussels (bouchot), small and not so tasty, with fries (belgian ones 😇) and Muscadet. Eaten outside, but with a jacket on.
We had only 1.3 kgms so Mr/Mrs Whatagain pretended not to be that hungry and watched their daughter eat it all with appetite.
I cooked another load of fries...

I have never understood the attraction of moules de bouchot. I prefer standard mussels. But when you read the advertising hype about bouchot, they make it sound like they are extraordinary.

I don't like missels from zeeland. White, not so tasty.
Tonight was papillotte de saumon.
You take an aluminium foil, fold it. Oil. Salmon. Some onions, lemon, courgette, and j added paprika. Sal, pepper, creme fraiche. 20 min in the oven, whilst the patatoes boil. Excellent.

I am invited to my nieces for Sunday lunch.
Not that I expect anyone to care but real food at my niece's house was so good. I ate things with gusto that I would normally nibble at = carrots and broccoli were so yummy. A lesson learnt - appreciate good food whilst you can. Back to microwave crap tonight and tomorrow but I hope that at lest I will have a hob by Weds / Thursday

I hope that at lest I will have a hob by Weds / Thursday Fingers crossed that is so! I remember that you were cooking up a storm right before this renovation started, so it's obvious that you need a nice kitchen & that you know what to do with it.

I had the best lamb I’ve ever had tonite, in Akureyri, Iceland.
The tour is going swimmingly, and our tour director said that our weather in the highlands today was the best she can remember in 10 years! My sister is posting a Facebook travelogue each day, and I am journaling and taking 100’s of photos.
The food is one of the highlights so far. Tomorrow we visit a herring museum for a tasting.

Well, bread (there are excellent German breads) and there are enough people from the halloumi part of the world there that I'm not surprised. For me, corn on the cob is the joker.

I am so surprised that the food is good because everyone I know who has visited says the opposite. I expected to be disappointed, but the tour is pricey, so maybe we are getting higher quality meals. The presentation is very fancy, a dollop of this a few dabs of that, a smear of something else all arranged very appealingly on a white plate. Large servings, and very high quality ingredients: Arctic Char, cod, lamb and beef. Breakfast buffets with bacon and eggs, skyr Icelandic yogurt, fruit, and cod liver oil and beet juice for health. My only complaint is the paucity of salads. Understandable because they need greenhouses to raise much produce, but I’m craving salads. And everything is SO expensive, but no service charge or tip to add, and they cheerfully separate the check for individual payment.

You gotta try the gas station food there. They put BBQ chips in the sandwiches and the bread is so soft it falls apart while you eat it! Wash it down with an Appelsin.

Just had lunch at a gas station rest stop. I had hoped to try the famous Iceland Hot Dog, wrapped in bacon, and a milk shake. But got into the wrong line and had other choices. My Tandoori chicken salad was nothing to write home about.

But dinner tonite was lovely. A seafood soup with langoustines, shrimp and scallops in a cream base, followed by a tender hunk of beef tenderloin, nestled among tiny potatoes and roasted carrots, followed by a lemon curd dessert topped with fruit.

Tonite is the last group dinner, and none of the 4 group dinners were lamb, rather an oversight for a tour of Iceland, since they are known for their free-range lamb. The group asked the tour director if it would be possible to substitute lamb for one of the many fish meals, and our request has been granted. And my sister and I stay one more night than the rest of the group, so will have one last chance to savor a meal of our choice.

I can't imagine visiting Iceland without aimlessly wandering around there unsupervised for at least a few hours. We walked 24000 steps in Reykjavik just on our arrival day. 2 guided walks and one free roaming. My sister and I will be able to roam our final evening too - after the helicopter tour to the volcano (if the weather permits).
