And even get to land near the slow moving pahoehoe lava to experience it with most of our senses!
Ironically, the only sense we’ll miss is the one that this thread is all about! (Sorry about the thread jack. The bus has WiFi, but I miss photo ops if I take too much attention off the scenery.)

A neighbor from the "old" neighborhood brought over a pan of homemade vegetable lasagna with homegrown vegetables from the community garden.

Well it ( the food in Iceland ) does sound much more varied than I believed. It sounds a fabulous trip Kimby - hopefully a report to follow ? A neighbor from the "old" neighborhood brought over a pan of homemade vegetable lasagna with homegrown vegetables from the community garden. That is lovely Casimira , I guess that you really enjoyed it .

I still have limited cooking facilities so again its another (maybe) bleugh . But less so than the last week or so as I now have an oven and a sink in working order.

Yes, that lasagna was not only a kind gesture, it sounds delicious & healthful. I had so much lunch today that the idea of supper was no more than a vague idea of something that maybe I'd read about characters in a book doing. The only token supper-ish thing I did was to make a cup of coffee an hour or so after returning from today's excursion. With the coffee, I had some of the really dreadful beet cookies I made a couple of days ago.

I also opt for the thighs. I don't care for chicken breast. The Moroccan butcher's at Jean-Talon market has excellent chicken. It is halal and I suppose halal - and kosher - meats can be dry, but theirs isn't. (I'm not remotely interested in religious ritual slaughter requirments). They also make excellent lamb merguez and chicken sausages; neither are over-spiced.
I'm glad the Tod household - and many other households of all origins in the region - were able to enjoy a pleasant and peaceful supper.

I just posted in the petty personal traumas about our frustration where we are but yours sounds far more frustrating and limited. Hope you can resolve it soon Lugg. The vegetable lasagna was superb.

We will be having chicken thighs on the BBQ tonight. With some roasted baby potatoes and some grilled mushrooms.
Last evening we had a take-out meal with our friends down the lake on their patio celebrating their daughter accepting her first career position after graduating University this past May. She graduated with a Degree in Commerce/Fashion and accepted a position at a company that makes clothing for the elderly and disabled. We had pizza, chicken wings, hamburgers, fries, greek salads and a Beyond meat burger for the graduate. We also opened a bottle of Prosecco to toast the celebration.

I hope that, given her age, she will manage to produce garments that are stylish and don't scream "geriatric ward" or second-childhood pastels. Obviously not teenage fashion for the older people among her potential clients, but I know lots of people from their 50s up to their 80s who live in jeans and other garments their children or grandchildren would wear.
And of course disabled people can be of any age and style tribe...

Her ideas align with your thoughts as well Lagatta, while function and comfort is paramount for the elderly, there is no reason why style has severely lacked or in most cases has been non-existent. As you say, "disabled people can be of any age and style tribe". Our meal on the patio overlooking the lake on a gorgeous evening was truly lovely Lugg. These celebrations seem even more heartfelt after the last 18 months. Dinner tonight was delicious! what a wonderful vocation that the young lady chose to pursue. We care for her dearly and have since the day she was born, very proud of her choice. She had another opportunity that others her age most likely would have chosen, she feels this is an important first choice.

These celebrations seem even more heartfelt after the last 18 months. ❤️ I got to go to the most wonderful string concert tonight in another town, On the way back we stopped for tlayudas -- very large crisp tortillas loaded with toppings of ones choice. My companions had the Oaxaqueña, which had a little of every traditional goody from here -- chorizo, tasajo, chapulines, guacamole, etc. I was thrilled to see that one of the house specialties was chitterlings, which I haven't had in ages. It was fabulous. The beverage was chia-ade. Those little seeds are good for something besides being smeared on clay animals!

Sounds to have been a perfectly lovely evening all way round. From the concert to the meal, and, foods that you love available.
I am going to bake some salmon steaks this evening. They are going to be served over a wild rice concoction of some chanterelle mushrooms, onions and maybe some chopped up zucchini in there. The mushrooms are fresh, fresh. Harvested early this a.m. by a friend. (all this rain at least produced something other than weeds and vines!!

I am preparing schnitzels with a Jager sauce. Mash potatoes, carrots in garlic and parsley with grilled zucchini on the side. Mr.Tod presented me with a red cabbage so I will cook that shredded with slices of apple.

Our last dinner on the tour in Iceland was lamb ribeye, very rich and succulent and marbled with fat. A few carrots and small (mushroom sized) potatoes and no salad.
I get that it’s difficult to grow produce in a country with such a short growing season. But my digestive system is used to salad every day, so coming home I was so looking forward to a big salad, but unfortunately, Mr. Kimby left the refrigerator almost empty of salad fixings. Off to the market to remedy this.

Can one become tired of eating vegetables every day? I think I need a break from anything green, yellow or white! So, after receiving the Fishmongers message to say fresh fish was available, I hared off to snap some up. Tonight's dinner will be deep water Hake for Mr. Tod - wwfsassi.co.za/fish-detail/47/And for me, I chose some Dorado. wwfsassi.co.za/fish-detail/38/Simply grilled in both cases and served with a homemade tartar sauce and crispy warm paninis.

That smoked salmon and tabouli would be right up my alley given the hot weather here.
We have a lovely woman in our neighborhood who owns a catering business. One day each week she offers a choice of two different salads and delivers them to another neighbor's house for us to pick up. This week's salad offering is homemade crab cakes on a bed of greens with avocado and asparagus and a creamy ranch like dressing. It also includes 2 slices of French bread and butter and a homemade brownie. Perfect fare for a too hot to cook weather.

For supper tonight I had avena de atole. That's a bunch of pretty Spanish syllables which translate to "oatmeal gruel".
I slurped down the glutinous liquid even though I had a freshly made pot of absolutely divine pork stew. The stew had to get made while the ingredients were nice & fresh, but because my stomach had been edgy all day, it seemed prudent not to enjoy the pork tonight.
