I bought a rotisserie chicken today. I pulled off all of that delicious skin and sliced some of the breast for us both. Our first meal in 4 days, recovering from a flu. We were both so happy that something stayed down.

Sorry to hear you guys have had bad time of it Mich. Someone in our circle of business dealings said she had flu - then sent a photo of her Covid test....Positive. I think it has to be this new strain but as far as we know it has not been detected in South Africa.
My food stocks are starting to run low which I like because it gives me the opportunity to start afresh. Scratching around to see what I can serve for a meal today I came across the perfect Good Friday meal.....Tempura Hake steaks, sweet and ordinary potato fries, and some mushy peas - they are tinned from Batchelors - I might switch to fresh frozen Petit Pois which I love. Happy fish Friday everyone!

I bought some fresh salmon fillets for tonight. I plan to just sear them ever so slightly on the outside and leave the inside raw. If all goes well, it should look like this.

Tonight I sautéed chicken livers with onions and served them on top of Alsatian egg noodles. Besides being delicious, all of the ingrediants cost less than 2 euros. This is perhspa another reason that I don't go to restaurants as often as I should.

Delicious and inexpensive, well done! I do not think I have even had chicken livers.
I put chicken leg quarters in the oven. I just sprinkle them with lots of seasoning salt and pepper, the result tastes pretty much like a rotisserie chicken. It is the only thing I can get my husband to eat right now.

Sounds as though your husband still isn't feeling 100%, Mich. Hope he's better soon.
I do like chicken livers -- a delicious, nourishing, & nice cheap food. I have to buy lots when I get them, because the dogs flip out when they smell them cooking.

Kerouac - A magnificent feast! My favourite veg- carrots and peas. Being Easter Sunday I went all out with a beef rib roast with Yorkshire puddings. They were wonderful and puffed up. Just two of us but getting all done in an organised manner is not easy but I feel proud that the meat was still a lovely shade of pink when carved. Tomorrow may be my turn at salmon but it will be served cold with a creamy Hollandaise sauce and a salad..

I had a huge desire to make potato pancakes for dinner but absolutely no desire to start peeling potatoes. So I ate a can of cassoulet and covered it with the rest of a bag of grated parmesan before putting it in the microwave. When it came out, I saw that there were a number of blueish green spots in the cheese, but when you live in the land of roquefort, this is not really I problem.
The potato pancakes will probably be made tomorrow, because when I have the idea in mind ahead of time, I peel potatoes at some time during the day and keep them in a bowl of water for later use.

That’s how I prepare AHI (yellowfin tuna). Don’t know if I’d be brave enough to eat salmon half raw. The Ahi steaks are sliced across the grain after searing about 3 minutes per side in a cast iron frypan. This sliced presentation allows the pink center and crust of seasonings to be seen on each slice.

Salmon and tuna are the two types of fish eaten raw very often in France. But since different countries have different fishing and sanitation rules, I don't have the slightest idea what is safe to eat in the United States.

I am having salmon too ; finally i have an appetite . That looks lovely K2 - mine is very plain with some new potatoes and asparagus. Potato pancakes sounds good.
Glad you enjoyed your chicken Mich and that both of you have recovered enough to enjoy ( manage) your Easter Sunday dinner today .

The Vietnamese grocery near me has very good fresh salmon, at a reasonable price. Obviously Livia gets a bit. She also flips out if chicken or duck livers are in the kitchen. Livia is a dainty little lady and doesn't overeat. But she was a street kitten, so she has that killer instinct.

We had our poached cold salmon with a lovely mixed salad. We like brown health bread on the side. I opened the little box of Thomy Sauce Hollandaise. Poured a little into a small jug and blitzed it for a mild temp in the micro. I was totally in love with it! Smooth and buttery and just gorgeous over each bite of salmon. To change it into a Bearnaise sauce all I have to do is spike it with tarragon. Aw gee that's too bad.... Next time? I too find the plate of food not appealing in appearance at times, or there is no time to snap a pic as the food gets cold. You do the most amazing job of your dinner delights Kerouac and we are so happy to see your accomplishments!

Tonight I will be making some sort of "brik" since I have a package of briks to use. I suspect that tuna, cheese and chopped spring onions are likely to be used.

Tonight we dined on lamb chops, rice and vegetables. I rescued a bag of homegrown broccoli from the freezer and coated it in a cheese sauce before heating in the airfryer. Together with carrots and a rich Jaeger(hunter) gravy it was a lovely meal.

Kerouac your Briks look very nice - I've tried them in Paris at various places but am always disappointed as they are paper thin and very oily.

Yes, restaurant briks are always disappointing. The trick at home is to use a double layer of brik so that you can really load it up without it falling apart.

Tonight I made mussels for about the first time in a year. And I still love them. Even though I did not make the mistake of adding any salt to the pot, I feel that I am going to be thirsty all evening. Hmmm, must remedy that sooner or later.

Kimby we call your Mahi-Mahi, Dorado, and it is often on menu's but hard to find at a fish shop. Another name for them in the states is “dolphin fish”, not to be confused with actual dolphins, a mammal. We usually buy Grouper when in Florida, but it’s half again more expensive than Mahi-mahi ($29.99 per pound vs $20.99 for the Mahi), and we like it better, too. But grouper is awfully good, too.
