Cool! Perhaps the technique could be improved by someone throwing herbs and spices in the air as the dough passes by.

I wonder why he had to bang the rolling pin twice in between tosses? The guy on the other side was so non-chalant as he caught the flattened dough!

Ha! I got it -- He bangs the rolling pin once as he flings, which alerts the catcher that dough is on the way. Then it comes down a second time just a moment before the dough arrives at the other guy's hands.
One does have to wonder why they don't just move the tables closer together, though, as the catcher is only an intermediary between the roller & a third guy.
