As a child, I did not gnaw bones, except perhaps the cartilage on chicken, which I have always liked. I was always amazed to see how my mother would pounce on the bones left by my brother and me (particularly pork chops), which she would manage to strip as though they had been lying in the desert for a year.
After growing up, I did try to do a better job, because I had totally integrated the importance of not wasting anything, but I have never been able to do as good a job as my mother or grandmother did. And since my mother wasn't around anymore for this task, somebody had to do it!
Naturally, in a restaurant I never pick up a bone except for those times that I do.
What is your personal policy about this?

Actually, what got me on this subject was when I was stripping the bone of the leg of lamb tonight. Once I had scraped everything I could with the knife, primitive measures were necessary before I could bring myself to put the bone in the rubbish.

I've always gnawed bones and have even done so at a restaurant I think (eat with your fingers type of establishment/ if things such as asian-type barbecue ribs have been ordered, obviously not in less relaxed circumstances)

Bones can also go into the soup pot.
I like to gnaw bones, but my teeth are fragile, so I only do so with great precaution. Not worth pain and a huge dental bill.
Kerouac's lamb bone would definitely have gone into soup pot, if only for a bit of calcium.

I was gnawing two leftover barbecued pork ribs for breakfast. Cold, and no sauce, either.

The best part of a lamb bone is cracking it open to get the marrow out! Quick tip: When making lamb curry always add lamb marrow bones to the pot. You can remove them later but I don't. The flavour is incredible.

Agree, I always smash a tube bone and add it to curries or soups.
And I also gnaw bones.
In fact everybody gnaws bones here. It's so popular you can order a bowl of bones with your noodle soup.

Pork spine is a popular cut here & the most satisfying way of getting the marrow out is a point of discussion.
One of the worst things about having dogs is that every morsel I nibble off a bone comes with a freight of guilt that dilutes the pleasure.
