The photos of those salads are lovely and definitely make it clear that the presentation of a salad is very important, so it should be arranged properly.
I also like the biryani mountain. I have never thought to do that.

I've had that, served by Iranian friends. They do wonderful things with rice.

When my Iranian colleague invited a group of us for a big meal, he served the rice as a big dome that came out of his special Iranian rice cooker (neverthless made by Moulinex or some such but available only in Iran). It cooks the rice like a normal rice cooker and then it has some sort of heat booster to scorch the outside and make it crispy and golden and hold together when the cooker is turned over into the serving dish. You have to crack the dome like a crème brûlée to serve people, giving them both normal steamed rice but also some of the crispy outside. I believe that considerable amounts of butter are also involved.

I am intrigued and hope to try some of those dishes before very long, probably starting with something easy, like the tomato salad. I have some pomegranate molasses, but have rarely used it.
