I love veal dishes but only seem to get them when I go to Spain.
Can't find veal in the shops here.
I wonder why?

There's plenty of veal in France but since it is sold at a higher price than beef, I only ever buy it at "expiration date" discounts. My palate is not very sophisticated and I cannot tell the difference.
When I was little, my mother made a point of saying the veal liver was the only kind of liver worth eating, so beef liver was out of the question. When I started buying liver myself as an adult, I immediately saw that veal liver was sold for about 300% the price of beef liver. So I have always bought beef liver, telling myself (and pretty much convinced that it is true) that the animals for beef liver are much younger than in the days of my mother when probably they sold the livers of cows dying of old age.

Yes, it's easily available here in France. Sometimes it's not much more expensive than beef. And there is definitely a difference in taste and texture if you buy cutlets.

Same in Belgium. Plenty available. An ossobucco with beef is not an ossobucco. But except fot this, we ahve skipped veal. We can afford it (actually we hardly ever bother looking at the price of what we eat), but we don't like it enough and prefer to see veals grow a little before being slaughtered.
I love meat but it gives me a problem to kill so many animals. If I were consequent, I'd be vegetarian. We also stopped lambs for the same reason, and we don't really like mutton... good for them.
